Livermore Valley Cellars (LVC) seems to have a reputation
for making big wild wines. A perfect example is their Non
Vintage Vino Rimanente. The wine is a blend of several
varietals - in their words, "This, that and the other
thing" - and the result is delicious. The wine starts off
showing an opaque ruby core that fades to a purple rim.
Smelling the wine fills your nose with an abundance of
concentrated aromas. Smells of raspberry and black plum mix
enticingly with spice, smoke, perfume, leather and hints of
dark chocolate. The palate is a gastronomical treat with intense flavors of raspberry and chocolate that follows the nose. The ample body is solid with smooth fine-grained dusty tannins and generous warm alcohol that gives the wine a harmonious balance. Sensuous and smooth, there is good agreement between all the varietals. After tasting this wine we had the pleasure of pairing it with wild caught Alaskan salmon grilled with an olive oil and sweet chipotle marinade. The result was fantastic! |
