This 2000 Burgundy was purchased in France. The wine starts off with a medium ruby/mahogany core that fades to a brick rim. On the nose, aromas of black tea, cranberry, raspberry and even black cherry can be noted along with smokiness. In the mouth the wine begs for a food pairing. The zesty even sharp acidity offers structure in a body that shows a firm consistency. The fine astringent tannins provide finishing touches for its medium lean body. The wine finishes modestly with an overall developed, yet delicate, intensity.

After tasting we paired this wine with a Fourme d'Ambert cheese. Fourme d'Ambert is more supple and dense than many blues. Its flavor is savory and nutty and really made the wine come into its own.
